  • 1 pound ground beef
  • 2 tablespoons olive oil
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 1 red bell pepper thinly sliced
  • 1 zucchini cut into half-moons
  • 1 cup cherry tomatoes halved
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • 1/2 tsp red pepper flakes optional
  • salt and black pepper to taste
  • 1/2 lemon juiced
  • 1/4 cup feta cheese crumbled
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add onion and garlic, sauté 2–3 minutes until softened.
  • Add ground beef, cook and break up until browned. Drain excess fat if needed.
  • Stir in red bell pepper and zucchini, cook for 3–4 minutes.
  • Add cherry tomatoes, cumin, oregano, paprika, pepper flakes, salt, and pepper. Cook for another 3–4 minutes.
  • Remove from heat, stir in lemon juice.
  • Top with feta cheese and parsley before serving.

Notes

Try swapping in other vegetables like mushrooms or spinach. This dish stores well for meal prep and tastes even better the next day.
