1 ½ cups all-purpose flour.
½ teaspoon baking powder.

1 teaspoon ground cinnamon.
¼ teaspoon nutmeg.
2 large eggs.
½ cup vegetable oil or coconut oil.
¾ cup sugar (white or brown).
1 teaspoon vanilla extract.
Optional: ½ cup chopped walnuts or chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
- Grate zucchini and gently pat dry to remove excess moisture.
- In a large bowl, whisk together eggs, oil, sugar, and vanilla extract.
- In a separate bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Combine wet and dry ingredients just until incorporated. Do not overmix.
- Fold in grated zucchini and optional mix-ins like nuts or chocolate chips.
- Pour batter into the loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
