Description

This Southern Peach Bread is a chilled, no-bake loaf made with fresh or canned peaches, creamy Greek yogurt, oats, and vanilla protein powder. High in protein, gluten-free, and easy to prep ahead.


Ingredients

  • 1 cup diced peaches (fresh or canned, drained)
  • 3/4 cup plain Greek yogurt
  • 1/4 cup nut butter (almond or cashew)
  • 1/2 cup vanilla protein powder
  • 1/2 cup rolled oats or almond flour
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract

Instructions

  • In a mixing bowl, combine yogurt, nut butter, and vanilla extract until smooth.
  • Add diced peaches and stir to incorporate.
  • Mix in protein powder, oats (or almond flour), and cinnamon.
  • Line a loaf pan with parchment paper and press the mixture evenly into it.
  • Chill in the fridge for at least 4 hours or overnight.
  • Slice and serve cold. Store leftovers in the fridge.

Notes

  • For a tropical twist, substitute mango for peaches.
  • Make it vegan by using plant-based yogurt and protein.
