Ingredients
2 medium carrots, peeled and sliced thin
2 medium zucchinis, sliced
2 tablespoons olive oil
2 cloves garlic, minced
Salt and black pepper, to taste
Optional: fresh thyme or lemon juice`
Instructions
Heat olive oil in a large skillet over medium-high heat.
Add sliced carrots and sauté for 4–5 minutes until slightly tender.
Add zucchini and garlic; continue to sauté for another 4–5 minutes.
Season with salt, pepper, and optional herbs.
Cook until vegetables are tender but not mushy.
Serve warm as a side or over rice or quinoa.
Notes
For extra flavor, try adding balsamic vinegar or a sprinkle of Parmesan before serving.
