Description
A creamy, one-pot ground beef stroganoff made in under 30 minutes simple, savory, and family-friendly.
Ingredients
1 lb lean ground beef
1 medium onion, diced
2 cloves garlic, minced
1 cup sliced mushrooms
2 ½ cups beef broth
1 tbsp Worcestershire sauce
1 tsp Dijon mustard
8 oz egg noodles
½ cup sour cream
Salt and pepper to taste
1 tbsp olive oil or butter
Instructions
Heat oil in a large pot. Sauté onion for 3 minutes, then add garlic and mushrooms; cook until soft.
Add ground beef, season with salt and pepper, and cook until browned. Drain excess fat.
Stir in Worcestershire sauce and Dijon mustard. Let simmer for 2 minutes.
Pour in beef broth and bring to a simmer. Add noodles and stir to coat.
Cover and cook 8–10 minutes, stirring occasionally, until noodles are tender.
Remove from heat and stir in sour cream until smooth and creamy.
Taste and adjust seasoning as needed.
Notes
Swap sour cream with Greek yogurt for a tangier twist.
For low-carb, replace noodles with zucchini noodles or cauliflower.
