Ingredients

  • For the Chicken Skewers:
  • 1.5 lbs boneless, skinless chicken thighs or breasts (cut into 1.5” cubes)
  • 1 red bell pepper, chopped into 1.5” piece
  • 1 yellow bell pepper, chopped into 1.5” pieces
  • 1 red onion, cut into chunks
  • 810 wooden or metal skewers
  • For the Marinade:
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice (freshly squeezed)
  • 3 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • Optional: 1 tablespoon plain Greek yogurt (for extra tenderness)

Instructions

  1. Prep the Marinade
    In a large bowl, whisk together olive oil, lemon juice, garlic, smoked paprika, oregano, cumin, salt, and pepper.

  2. Marinate the Chicken
    Add chicken cubes to the bowl and toss well to coat. Cover and refrigerate for at least 2 hours (up to 8 hours for deeper flavor).

  3. Soak the Skewers (If using wooden)
    Place skewers in water and soak for at least 30 minutes to prevent burning.

  4. Assemble the Skewers
    Alternate marinated chicken, bell peppers, and red onions on each skewer. Don’t pack them too tightly.

  5. Preheat the Grill
    Set your grill to medium-high heat (about 375–400°F). Oil the grates lightly.

  6. Grill the Skewers
    Place skewers on the grill and cook for 10–12 minutes, turning once halfway through. Grill until chicken is golden and the internal temperature hits 165°F.

  7. Rest & Serve
    Remove from grill, let rest for 5 minutes, and serve with your favorite side dish or dipping sauce.

Notes

  • Protein Swap: Works well with shrimp or beef cubes too—adjust cooking time accordingly.
  • No Grill? Use a grill pan or broil in the oven for 10–12 minutes.
  • Make-Ahead: Chicken can be marinated and skewered the night before. Store in the fridge.
