Ingredients

1 1/2 lb (650g) flank steak, sliced against the grain (or ribeye steak, tenderloin, strip loin, strip steak…)

1 1/2 lb (650g) baby yellow potatoes, quartered

1 tablespoon olive oil

3 tablespoons butter, divided

5 garlic cloves, minced

1 teaspoon fresh thyme, chopped

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh oregano, chopped

Salt and fresh cracked pepper

Crushed red chili pepper flakes, optional

For The Marinade

1/3 cup soy sauce (or coconut amino for paleo and gluten-free)

1 tablespoon olive oil

1 tablespoon hot sauce (we used Sriracha)

Fresh cracked pepper


Instructions

  1. Marinate the Steak
    In a large bowl, combine the steak strips with soy sauce, olive oil, freshly cracked pepper, and hot sauce. Toss to coat evenly, then set aside to marinate while you prepare the potatoes.

  2. Sear the Potatoes
    In a large skillet over medium-high heat, heat 1 tablespoon of olive oil and 1 tablespoon of butter. Once the butter is melted and sizzling, add the quartered baby potatoes in a single layer. Cook for 4 minutes without stirring to get a golden crust, then stir and cook for another 4–5 minutes until tender and browned. Transfer potatoes to a plate and set aside.

  3. Build the Garlic Butter Base
    In the same skillet, reduce heat to medium and add the remaining 2 tablespoons of butter along with the minced garlic, red chili flakes (if using), and chopped fresh herbs. Stir until fragrant, about 30 seconds.

  4. Cook the Steak
    Lay the marinated steak strips in a single layer in the skillet. Reserve the marinade for later. Sear the steak for 1 minute per side, or until browned and cooked to your desired doneness.

  5. Combine and Finish
    If desired, pour in the reserved marinade and cook for an additional minute to intensify flavor. Return the sautéed potatoes to the skillet, tossing everything together until heated through and well coated in the garlic butter.

  6. Serve and Garnish
    Remove from heat and serve immediately. Garnish with extra crushed red pepper, fresh herbs, and a sprinkle of parmesan cheese over the potatoes, if desired. Enjoy warm!

Notes

You can easily swap flank steak with ribeye, tenderloin, or strip steak—just use what you have on hand. For the most tender bite, always slice the steak against the grain. This recipe is also great for meal prep: make it ahead and reheat in a skillet to keep the steak juicy and the potatoes crispy.
