This cucumber Caprese salad brings together crunchy cucumbers, juicy tomatoes, creamy mozzarella, and fresh basil in a light vinaigrette. A refreshing twist on a classic, it’s perfect for summer meals, parties, or a healthy lunch.

Ingredients

Scale

2 English cucumbers, sliced

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (ciliegine)

1/2 cup fresh basil leaves, torn

2 tbsp extra virgin olive oil

1 tbsp balsamic vinegar or glaze

Salt and pepper to taste

Instructions

Slice cucumbers and tomatoes and place them in a mixing bowl.

Add mozzarella balls and torn basil leaves.

Drizzle with olive oil and balsamic vinegar.

Season with salt and pepper.

Toss gently to combine.

Serve immediately or chill for 30 minutes for enhanced flavor.

Notes

Use heirloom cherry tomatoes for more color variety.

Balsamic glaze adds richness—use sparingly.

Store without basil for better freshness if making ahead.
