Ingredients

2 pounds beef stew meat or chuck roast, cubed

1 tablespoon olive oil (optional)

1 medium onion, diced

3 garlic cloves, minced

4 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon onion powder

Salt and pepper, to taste

12 oz egg noodles

1 tablespoon cornstarch + 2 tablespoons water

Fresh parsley, for garnish


Instructions

(Optional) Brown beef in olive oil for added flavor

Add beef, onion, garlic, broth, Worcestershire, thyme, onion powder, salt and pepper to crockpot

Cook on low 8 hours or high 4–5 hours until beef is tender

Mix cornstarch and water; stir into pot 30 minutes before serving

Add egg noodles and cook 20–30 minutes until soft

Stir gently, garnish with parsley, and serve

Notes

Skip browning to save time.

Use gluten-free noodles if preferred.

Store leftovers for 3–4 days or freeze without noodles up to 2 months.
