Description
This Creamy Tuscan Chicken Pasta is rich, comforting, and ready in under 30 minutes. A perfect dinner packed with garlic, spinach, and sun-dried tomatoes.
Ingredients
2 boneless skinless chicken breasts
1 tbsp olive oil
3 cloves garlic, minced
1/2 cup sun-dried tomatoes (packed in oil)
2 cups fresh spinach
1 cup heavy cream
1/2 cup grated parmesan
8 oz fettuccine or penne pasta
1/2 tsp salt
1/4 tsp pepper
1 tsp Italian seasoning
Instructions
Cook pasta until al dente; set aside.
Season and sear chicken in olive oil until golden and cooked through; remove and slice.
In the same pan, sauté garlic and sun-dried tomatoes.
Add cream and parmesan; stir until smooth.
Add spinach; cook until wilted.
Return chicken and pasta to pan; toss gently to coat.
Serve hot with extra parmesan and herbs.
Notes
You can substitute half-and-half for a lighter sauce.
Use gluten-free pasta for dietary needs.
Store leftovers in an airtight container for up to 4 days.
