This Creamy Parmesan One Pot Chicken and Rice is a cozy, comforting dinner made with tender chicken, fluffy rice, and a creamy parmesan sauce—all in one pan! It’s easy, rich, and perfect for busy nights.
Ingredients
1 tablespoon olive oil
1 pound boneless skinless chicken thighs or breasts, cubed
1 small onion, finely chopped
3 cloves garlic, minced
1 cup long-grain or arborio rice
2 ½ cups chicken broth
½ teaspoon salt (adjust to taste)
¼ teaspoon black pepper
½ cup heavy cream
¾ cup freshly grated parmesan cheese
1 tablespoon butter (optional)
Fresh parsley, chopped (for garnish)
Instructions
Heat olive oil in a large pot over medium heat. Add chicken and cook until lightly browned. Remove and set aside.
In the same pot, sauté onion for 2–3 minutes, then add garlic and cook for another 30 seconds.
Stir in the rice and toast for 1 minute. Pour in chicken broth, salt, and pepper. Bring to a simmer.
Return chicken to the pot, cover, and reduce heat to low. Simmer for 18–20 minutes until rice is tender and liquid is absorbed.
Stir in cream, parmesan, and butter (if using). Let everything melt together into a creamy texture.
Taste and adjust seasoning if needed. Serve hot, garnished with parsley.
Notes
Use arborio rice for extra creaminess or long-grain rice for a fluffier texture.
Swap heavy cream with half-and-half or cream cheese for a lighter option.
Store leftovers in an airtight container up to 4 days. Reheat with a splash of broth or milk.
