Description
This creamy mushroom soup is rich, earthy, and easy to make in under 30 minutes.
Ingredients
16 oz mushrooms (cremini or button), sliced
1 medium onion, chopped
3 cloves garlic, minced
3 tbsp butter
3 cups vegetable broth
1 cup heavy cream (or dairy-free alternative)
1 tsp dried thyme
Salt and pepper to taste
1 tbsp flour (optional, for thickening)
Instructions
Sauté onion in butter until soft, about 4 minutes.
Add garlic and cook for 30 seconds.
Stir in mushrooms, season with salt, and cook until browned, about 10 minutes.
(Optional) Stir in flour and cook for 1 minute.
Pour in broth and thyme; simmer 10 minutes.
Blend until smooth (or leave some texture).
Stir in cream, season to taste, and simmer 2 minutes.
Serve hot with bread or toppings of choice.
Notes
For vegan version, use coconut milk or oat cream.
Add a splash of lemon juice at the end to brighten flavor.
Pairs well with crusty bread or rosemary rolls.
