These Coconut Toffee Chocolate Chip Cookie Bars are a chewy, buttery treat loaded with coconut flakes, sweet toffee bits, and melty chocolate. Perfect for bake sales, parties, or just a cozy dessert night at home.
Ingredients
1 cup unsalted butter, softened
1 1/4 cups brown sugar
2 large eggs
2 tsp vanilla extract
2 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
1 cup sweetened shredded coconut
1 cup chocolate chips
1 cup toffee bits
Instructions
Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper.
Cream butter and sugar until light and fluffy.
Add eggs and vanilla, mix until combined.
In a separate bowl, whisk flour, baking soda, and salt.
Gradually add dry ingredients to wet ingredients.
Fold in coconut, chocolate chips, and toffee bits.
Press dough evenly into the pan.
Bake for 25–28 minutes or until golden and set.
Cool completely before slicing into bars.
Notes
Store at room temperature for up to 5 days.
Freeze wrapped bars for up to 2 months.
Optional: sprinkle sea salt on top after baking.
