Ingredients
2 cups cold cooked rice
2 eggs, beaten
2 tbsp soy sauce
1 tbsp sesame oil
1/2 cup frozen peas and carrots
2 scallions, sliced
2 cloves garlic, minced
1 tbsp neutral oil (canola or avocado)
Instructions
Heat oil in a large skillet or wok over medium-high heat.
Scramble the eggs until just set; remove and set aside.
Sauté garlic and scallions for 30 seconds.
Add veggies and cook until tender.
Toss in the rice and stir-fry for 3–5 minutes.
Add scrambled eggs back in.
Pour in soy sauce and stir well.
Finish with sesame oil and serve hot.
