Moist and protein-packed Blueberry Cottage Cheese Muffins with simple ingredients, perfect for healthy breakfasts or snacks
Ingredients
1 cup cottage cheese
2 eggs
1/4 cup honey
1 tsp vanilla extract
1/4 cup coconut oil (melted)
1 cup flour (white whole wheat or all-purpose)
1/2 tsp baking soda
1/2 tsp cinnamon
Pinch of salt
1 cup blueberries (fresh or frozen)
Instructions
Blend cottage cheese, eggs, honey, vanilla, and melted oil until smooth.
Whisk flour, baking soda, cinnamon, and salt in a separate bowl.
Gently fold wet mixture into dry until just combined.
Toss blueberries in flour and fold into batter.
Scoop into muffin liners, filling ¾ full.
Bake at 350°F for 18–22 minutes until golden.
Notes
Use full-fat cottage cheese for creaminess.
Let ingredients come to room temperature.
