Description
A hearty one-pan dinner made with tender beef, fluffy rice, and colorful veggies. It’s the kind of meal that brings the whole family to the table simple, flavorful, and nourishing.
Ingredients
1 lb lean ground beef
1 cup jasmine or basmati rice (rinsed)
1 ¾ cups low-sodium beef broth
1 cup diced carrots
½ cup green peas (frozen or fresh)
½ cup corn kernels
1 small onion, finely chopped
2 cloves garlic, minced
1 tbsp olive oil
1 tsp ground cumin
½ tsp smoked paprika
Salt and pepper to taste
Fresh parsley for garnish
Instructions
In a large skillet, heat olive oil over medium heat. Sauté onion until translucent.
Add garlic and ground beef. Cook until browned, breaking it up as it cooks.
Stir in cumin, paprika, salt, and pepper. Mix well.
Add carrots, corn, and peas. Sauté for 3–4 minutes.
Add rice and toast for 1 minute with the beef and vegetables.
Pour in beef broth. Bring to a gentle boil.
Reduce heat to low. Cover and simmer for 18–20 minutes or until rice is tender and liquid is absorbed.
Fluff with a fork, garnish with parsley, and serve hot.
Notes
For extra flavor, stir in a tablespoon of tomato paste with the spices.
Swap beef for ground turkey or halal chicken if preferred.
